  1. Preheat oven to 350. Spray 9x5 inch loaf pan with non-stick cooking spray.
  2. Beat sugar and butter at medium speed until fluffy.
  3. Add milk, banana, sour cream, and egg whites. Beat well.
  4. Combine flour, baking soda and salt.
  5. Add dry ingredients to wet ingredients. Beat until blended.
  6. Spoon into prepared loaf pan.
  7. Cook at 350 for 45-60 minutes.

Healthy Banana Bread

My kids and hubby are crazy picky! None of them are breakfast eaters but as they’ve aged and matured have realized that they need something in the morning. Mostly breakfast entails cold cereal if they’ve left enough time (they are teenagers after all) or a quick grab and go protein shake. I’ve learned that one way to make sure they eat more is to have things on hand that they can grab and go. You will almost always find a fresh baked from scratch item on my counter for my picky eaters. This way I know what is going into their bodies, can sneak in what I want and they will always eat something. This banana bread is moist, healthy and down right yummy!

  1. Preheat oven to 350 degrees. Coat cookie sheet with non stick cooking spray.
  2. Spread oats, almonds, sunflower seeds, flax seeds and sesame seeds onto baking sheet. Bake until oats and nuts are golden and fragrant, about 10 minutes.
  3. Transfer above to large bowl and fruit. Toss to combine.
  4. In a small saucepan, cook almond butter, sugar, honey, vanilla and a pinch of salt over medium heat until combined and bubbling.
  5. Immediately pour hot mixture over dry ingredients and mix to combine.
  6. Transfer to an 8x8 inch pan coated with cooking spray. Fatten with hand and then refrigerate for about 30 minutes.

Honey Nut Power Bars

While there are great bars out on the market these days, I always like the idea of making my own as I know what is in them and can add different ingredients to my taste. These bars are by far one of my favorite snacks and can be altered based on what I have on hand. I often call them my “everything bar” because they have everything in them. However, I have to watch myself because they are so tasty I want to keep eating them. Just because they are healthy, doesn’t mean they are low calorie. They are perfect for kids and teens because they pack into lunches well and make a great after school or anytime snack.

If you have kids like me, you've seen your share of chicken strips. My kids are teenagers and still like a good chicken strip from time to time. The problem is, more often than not, they are packed with crap! In fact, there is only one brand "Rocky Range" chicken, sold at Costco that I feel okay about giving my kids these days. It is sustainable, organic, antibiotic free and so on - love it! However, when I have time, I prefer to make my own. One of my youngest boys favorite meals I prepare for him is my own homemade Chicken strips made with Cracker crumbs. They are a healthy, kid friendly alternative to store bought chicken strips. My son loves them because they are crunchy, I love them because I made them and know what is in them. Can you say "win, win?!"

  1. Place crackers of choice into a large zip lock bag and roll rolling pin over them until crushed. Any crackers can be used. This is a good time to use up unused crackers left over from the holidays.
  2. Add cheese, garlic powder and salt to zip lock and shake.
  3. After washing and drying chicken, cut into strips.
  4. Put yogurt into dish.
  5. Roll chicken strips into yogurt and then into bag of crackers, shake until well coated.
  6. Place coated chicken into 9x13 inch pan coated with cooking spray.
  7. Drizzle butter over top.
  8. Bake in a 350 degree oven for 30-45 minutes turning half way in between.
