I love Mexican food and this is one of my favorite, mid week, family friendly, lighter recipes. Just toss it all together, throw it in the oven and you are ready to eat. And it is even better the second and even third day.

  1. Preheat oven to 450.
  2. Combine cheese and next 7 ingredients (through chiles) in a large bowl. Stir until combined.
  3. Pour into a 13x9 inch baking dish coated with cooking spray.
  4. Bake for 15 minutes or until set.
  5. Poke entire surface of casserole with fork and pour enchilada sauce over top allowing it to sink down into the holes.
  6. Top with chicken and remaining cheese.
  7. Bake another 15 minutes or until bubbly.
  8. Remove from oven, let stand 5 minutes and enjoy with your favorite toppings.
