  1. Soak beans according to package. I prefer the quick soak method as I'm impatient and often forget to soak the night before.
  2. Chop veggies and place in dutch oven or large pot.
  3. Add remaining ingredients and turn on.
  4. Bring to a boil. Once it is boiling, turn down to simmer and simmer for 2 1/2 hours. Check periodically and add more liquid if needed.
  5. Add pepper and any other seasoning you like if you feel like it could use more spice. Now let it cool and then pack it in a nice pot for your loved ones and surprise them with a nice meal. Save some for you of course!
