When I have a splurge meal, it’s Mexican all the way! After every single Figure competition I’ve ever done, I head straight to the best Mexican restaurant I can find and eat my heart out! I love everything about it, except the fat and calories. Mexican food is hearty, comfy, family friendly and makes for a great mid week meal because there is usually leftovers and it always taste better the second time around.   1. Preheat oven to 350 degrees. Spray 9x13 inch casserole with non-fat cooking spray.
  2. Chop grilled chicken into bite sized pieces.
  3. Mix together chicken, 5 oz. (half) of the enchilada sauce, sour cream, cheese, green chilies, and seasonings.
  4. Pour leftover enchilada sauce into bottom of casserole dish.
  5. One at a time, roll tortillas into sauce and then fill with chicken mixture. Roll up and place side by side into casserole dish.
  6. Top with cheese and bake for 25-30 minutes until golden and bubbly. Enjoy!
