Turkey Meatball Soup
Looking for a recipe to warm you up while slimming you down? This soup is full of all the right stuff! High protein, low fat and tons of flavor.
I throw in extra carrots.
Again, toss in some extra here.
lean ground turkey
fresh spinich, kale or collard greens
I use spinich but love kale!
salt and pepper
Heat oil in large soup pot over medium heat.
Add carrots, celery, onion and fennel seed and cook until golden and fragrant.
Add tomatoes and chicken stock. Bring to simmer.
Meanwhile, in a bowl combine turkey, egg, Parmesan, garlic and nutmeg.
Roll mixture into 24 balls.
Roll into 24 balls and drop into soup and cook through 10-15 minutes.
Add spinach and cook an additional 10 minutes.
Season with salt and pepper if desired and enjoy!
