Turkey Meatball Soup

  1. Heat oil in large soup pot over medium heat.
  2. Add carrots, celery, onion and fennel seed and cook until golden and fragrant.
  3. Add tomatoes and chicken stock. Bring to simmer.
  4. Meanwhile, in a bowl combine turkey, egg, Parmesan, garlic and nutmeg.
  5. Roll mixture into 24 balls.
  6. Roll into 24 balls and drop into soup and cook through 10-15 minutes.
  7. Add spinach and cook an additional 10 minutes.
  8. Season with salt and pepper if desired and enjoy!
