I love Mexican food and this is one of my favorite, mid week, family friendly, lighter recipes. Just toss it all together, throw it in the oven and you are ready to eat. And it is even better the second and even third day.
So this sudden and welcome rain has me craving some comfort food. While Pizza comes to mind, I know that I’ll thank myself later if I can come up with a saucy alternative that is a lot more healthy. Therefore, I’ve decided to throw on a family favorite, Turkey meatballs with red sauce. They are super easy, low maintenance and are perfect in cold weather. I eat them with veggies on the side, but my family likes them over pasta. Way more healthy then spaghetti and meatballs and packed with the protein that I love. You can do a quick stove top method or pop into a crock pot for the day so you have a meal waiting for you after a long day.
My kids and hubby are crazy picky! None of them are breakfast eaters but as they’ve aged and matured have realized that they need something in the morning. Mostly breakfast entails cold cereal if they’ve left enough time (they are teenagers after all) or a quick grab and go protein shake. I’ve learned that one way to make sure they eat more is to have things on hand that they can grab and go. You will almost always find a fresh baked from scratch item on my counter for my picky eaters. This way I know what is going into their bodies, can sneak in what I want and they will always eat something. This banana bread is moist, healthy and down right yummy!
So today was my staff Amanda’s Birthday. As with all my friends and families birthday’s I like to make a special treat to celebrate. I mean life is too short to not eat cake!! However, as a Fitness professional it’s not easy cooking for your fitness staff. As much as they enjoy a treat, they are also health conscious like myself so practice moderation whenever possible. Therefore, sometimes the task of cooking a celebratory treat can be tricky. I’m always up to the challenge.
To please everyone’s palette’s, I decided to prepare two treats. One “naughty,” and one “nice”! My staff couldn’t tell the difference. The “nice” treat was moist and yummy and super chocolaty. Not that the “naughty” one wasn’t mouthwatering, but it just goes to prove that “nice” doesn’t mean tasteless!
So I have teenagers which means mornings are “fast and furious” around our house. Being boys, they want to sleep until the last possible second meaning that breakfast is either “grab and go” or doesn’t even happen. Since I’m already at work (I leave the house at 5:45 am), chances of them eating something is even less likely. My oldest loves a muffin or loaf bread because it is something that he can throw into a baggy the evening before. I of course would rather them eat something healthier, but I’m a realist after all, so rather than having them skip breakfast altogether, I make it my goal to find ways to make what they will eat just a little bit healthier. This week, my son asked to “Cinnamon Muffins.” Here is my healthier version.
