  1. Pre-heat oven to 375. spray a 9x9 baking dish with non-stick cooking spray.
  2. In a large bowl, mix the chicken, diced tomatoes, half of the enchilada sauce, salsa, seasoning, cream cheese, corn and black beans. Combine.
  3. pour the remaining enchilada sauce into a shallow bowl. Dip tortillas into sauce and lay on bottom of baking dish. Put some of the mixture over the sauce, spreading evenly. Repeat another layer of tortillas and then mixture. End with tortillas.
  4. Top with cheese and put into oven and bake for 30 min. or until bubbly. Enjoy!

I’ve become an avid tennis player in the last year. Some would even say I’m a bit obsessed. Most of those people don’t play sports and haven’t gotten the opportunity to be part of a team and all of the fun that goes along with it. I currently play on two teams and play recreationaly with  bunch of lovely ladies that I now call friends.

Tennis is very social. And where there is social, there is food! The home team is responsible for providing a meal and drinks following the game. While this can sometimes be difficult especially during the week, it is a great opportunity to try out new casseroles and other crowd  pleasers. Being the “Fit-chick,” I always like to try to make something as healthy as it is yummy. I prepared this casserole at my last home match and I actually got an e-mail from a lady on the other team requesting that I post it. Thanks for the reminder Alyssa!

  1. Wash and dry chicken breast. Cut away any fat. Butterfly chicken breast but cut all the way through to make two pieces of chicken. Place in large zip lock bag.
  2. Place all remaining ingredients in bag with chicken. Massage bag to fully mix ingredients and place in fridge until ready to cook or for a minimum of 30 min.
  3. When you are ready to cook, spray grill pan with non-stick cooking spray. When hot add the chicken and grill on both sides until done.
  4. In a separate pan, put remaining marinade and cook until it comes to a boil to ensure that it is safe to eat.
  5. Serve chicken over rice with marinade if you like and enjoy!

  2. Combine olives, tomato, parsley, cheese, 2 tsp. fresh oregano and 1/8 tsp. salt.
  3. Season chicken with salt. pepper and oregano.
  4. Coat pan with cooking spray. Cook chicken until done and top with olive and tomato mixture.

  1. Preheat oven to 450.
  2. Combine cheese and next 7 ingredients (through chiles) in a large bowl. Stir until combined.
  3. Pour into a 13x9 inch baking dish coated with cooking spray.
  4. Bake for 15 minutes or until set.
  5. Poke entire surface of casserole with fork and pour enchilada sauce over top allowing it to sink down into the holes.
  6. Top with chicken and remaining cheese.
  7. Bake another 15 minutes or until bubbly.
  8. Remove from oven, let stand 5 minutes and enjoy with your favorite toppings.

  1. Heat oil in large skillet over medium heat.
  2. Sprinkle chicken with salt and pepper liberally. Add to pan and and cook until golden on both sides. Does not have to be thoroughly cooked. Transfer to plate.
  3. Add the peppers, onion and garlic to pan and saute until onion is tender. Season with salt and pepper.
  4. Add wine and simmer until reduced by half.
  5. Add the tomatoes, broth, capers and oregano.
  6. Return chicken to pan. Turn to coat in sauce.
  7. Bring to simmer. Continue to simmer for about 30 minutes until chicken is cooked.
  8. Sprinkle with basil and serve over pasta if you wish. Enjoy!
