  1. Pre-heat oven to 375. spray a 9x9 baking dish with non-stick cooking spray.
  2. In a large bowl, mix the chicken, diced tomatoes, half of the enchilada sauce, salsa, seasoning, cream cheese, corn and black beans. Combine.
  3. pour the remaining enchilada sauce into a shallow bowl. Dip tortillas into sauce and lay on bottom of baking dish. Put some of the mixture over the sauce, spreading evenly. Repeat another layer of tortillas and then mixture. End with tortillas.
  4. Top with cheese and put into oven and bake for 30 min. or until bubbly. Enjoy!

I’ve become an avid tennis player in the last year. Some would even say I’m a bit obsessed. Most of those people don’t play sports and haven’t gotten the opportunity to be part of a team and all of the fun that goes along with it. I currently play on two teams and play recreationaly with  bunch of lovely ladies that I now call friends.

Tennis is very social. And where there is social, there is food! The home team is responsible for providing a meal and drinks following the game. While this can sometimes be difficult especially during the week, it is a great opportunity to try out new casseroles and other crowd  pleasers. Being the “Fit-chick,” I always like to try to make something as healthy as it is yummy. I prepared this casserole at my last home match and I actually got an e-mail from a lady on the other team requesting that I post it. Thanks for the reminder Alyssa!

  1. Preheat oven to 350.
  2. Spray 13x9 i8nch casserole with cooking spray.
  3. In large skillet, cook onion, garlic and meat until done.
  4. Drain any liquid and return to low heat.
  5. Add remaining ingredients except cheese plus 1/2 cup of water and mix thoroughly.
  6. Pour into bottom of prepared casserole, top with cheese and cook in oven for 15 minutes until bubbly - enjoy!

One Pot Skinny Tex Mex Casserole

I recently got back to playing tennis and joined a women’s league to up the challenge. Little did I know that a big part of tennis is social, meaning eating and drinking. The host team brings a meal to treat the visiting team. It’s great fun, but can wreak havoc on your waistline. In an attempt to lighten things up while still bringing something that travels well and can sit until our games are complete I found a casserole that fit the bill. I originally pinned it from pinterest, but decided to tweak it a bit to make it quicker and easier. Everyone loved it and asked me to share so here it is!

  1. Preheat oven to 450.
  2. Combine cheese and next 7 ingredients (through chiles) in a large bowl. Stir until combined.
  3. Pour into a 13x9 inch baking dish coated with cooking spray.
  4. Bake for 15 minutes or until set.
  5. Poke entire surface of casserole with fork and pour enchilada sauce over top allowing it to sink down into the holes.
  6. Top with chicken and remaining cheese.
  7. Bake another 15 minutes or until bubbly.
  8. Remove from oven, let stand 5 minutes and enjoy with your favorite toppings.

  2. Brown ground turkey over medium heat.
  3. Add taco seasoning.
  4. Rinse and drain beans. Smash lightly if black beans.
  5. Spread a spoonful of beans onto flour tortilla. Follow with a spoonful of turkey, sprinkling of cheese and some salsa.
  6. Fold sides of tortilla in and then fold over. Spray both sides of chimi with cooking spray. This will help it be nice and golden. Place on cookie sheets. Repeat with remainder of tortillas.
  7. Bake at 350 for 15 minutes. Turn over and bake and additional 15 min. until golden on both sides. Top with your favorite toppings and enjoy!

Bailey’s Baked Chimichanga’s

My oldest son, like many teens, loves Taco Bell. I remember loving it as a teen. It’s inexpensive, easy and filling. Most importantly, it’s Mexican. While he prefers Chipotle or other higher end Mexican food, Taco Bell is within his budget, close by and fast. As a mom, while I can appreciate all those qualities, I’d prefer he’d eat something a bit healthier. Therefore, when I saw a recipe for baked Chimichanga’s on pinterest, I immediatley repinned it.

Of course as tasty as the original recipe sounded, I felt like it could use a little cleaning up. The original recipe called for cream cheese and pepper jack which adds too much fat and calories for my taste. I changed a few things to lighten it up and it was just as delicious, but much more nutritious! I make a big batch of these babies, wrap them up, freeze and my son has lunch anytime he wants.

  2. In a large saucepan, heat cumin seed until toasted and fragrant. About 3-4 minutes.
  3. Stir in broth, undrained tomatoes, dried tomatoes and orzo.
  4. Bring to boil.
  5. Transfer mixture to 2 quart baking dish.
  6. Top with chicken breast.
  7. Bake uncovered for 20 minutes or until orzo is tender.
  8. Top with pepper and paprika if using.

We all have those “go to” recipes that we have been making for years and are always a hit. This is one of mine. I’ve made it for my own family hundreds of times and for others families countless times. It is the recipe that I prepare if someone needs a meal dropped off because they’ve just had a baby, are sick or just need a little helping hand.  It always gets rave reviews and I’m always asked for the recipe. These days, I just include the recipe when I drop it off. I like it because it’s super easy, healthy, family friendly, uses only one pot (A “one pot wonder”) and it taste even better the second time around. Enjoy!
